At Il Moretto Farm, edible herbs are a living tradition: knowing, recognising and cooking them means bringing the authentic taste of our territory back to the table.
The first course on wild herbs, organised by Coldiretti Massa Carrara, has just ended, with classroom lessons at the Calevro farmhouse and practical cooking lessons with our farmer-chefs Paolo Caruso and Piera Mosti as teachers.
Amidst the scents of the vegetable garden and fields surrounding Il Moretto, the herbs gathered were transformed into simple and delicious dishes: from classic herb pies to original preparations that enhance the flavours and properties of wild plants.
This journey is not only about cooking, but also about culture: at Il Moretto, we believe that a healthy and conscious diet is the first step towards living better and longer. Rediscovering the herbs in our gardens and fields means defending precious knowledge, often obscured by industrial foods and hurried habits.
